I am always on the lookout for healthy but really good recipes. I don’t like sacrificing taste for healthier options because I KNOW it’s possible to have both. I like enjoying my food but I also enjoy eating food that will make me feel good. I have found quite a few new ones that I’m looking forward to making soon but this kale, balsamic and pomegranate pizza recipe is from A Beautiful Mess.
They have their own crust recipe but I decided to make it on a small tortilla because I wanted it a bit crispier and thinner for a snack instead of a meal. I love how the pomegranate seeds added some crunch and a really bright pop of sweetness. The balsamic reduction brings the perfect amount of tart to really brighten the palette of this dish.
This recipe is super easy and doesn’t take very long at all, with a healthy and delicious outcome. With kale and pomegranate both being superfoods, you can’t go wrong with this dish including a bit of fruit and a serving of vegetables.
